I love pancakes.
When I was little I remember being able to eat 9 of my dad's Saturday morning pancakes. A record!
My dad was always the one making weekend pancakes.
Around here Larry is the one making Sunday morning breakfast (okay, Saturday too) and while it varies between waffles, eggs, and oatmeal...it usually focuses on some kind of pancake (Swedish, Ricotta, Pan/Oven, etc.).
I grew up with my dad making pancakes from a Bisquick box. That bright yellow box was always in our pantry.
I have had the same "baking mix" box in my pantry for almost a year. (I only use it when a dessert recipe calls for it, like a coconut pie everyone loves.) These days we make our pancakes from scratch and while it may seem daunting, it really isn't and is still very easy. And the taste is far superior!
Yet I have found a new pancake to love.
OHMYGAWD.
Buttermilk pancakes, where have you been all my life?
Okay, if you are making pancakes from a yellow box or, GASP, frozen concoctions that you pop in the microwave or toaster (okay, let me pause to say: YUCK! Gross! There are better things out there to put in your body! Stop eating that crap!!) stop immediately and try this recipe (and if time is an issue: the batter can be made the day before AND the pancakes CAN be frozen and popped into your toaster and at least you know what you put in them. Okay, I'm stepping off my soap box). I can not say enough how absolutely delicious these buttermilk pancakes are. Rich, decadent, YUMMY and SOOOOO much better than any other pancake I have ever had. Really.
Easy Peasy:
2 eggs
1/2 tsp. salt
1/4 cup sugar
2 cups buttermilk
1/2 tsp. baking soda
1 1/2 tsp. baking powder
2 cups flour
In a bowl, mix first 3 ingredients together. Stir soda into buttermilk in a measuring cup. Add to bowl. Lightly stir in baking powder and flour, just enough to moisen dry ingredients. Mixture will be thick and lumpy. Heat griddle and cook. Makes about 18-20 medium sized pancakes. See? That is not difficult!!
We doubled this recipe and I'm pretty sure I ate way more pancakes than I should have but I Could. Not. Stop. Okay, maybe not the best thing to have every morning but once a week is fine. (I should also point out that after consuming more pancakes than I remember eating since I was ten, we took off for a very long walk around the neighborhood. My guess is I burned off one pancake. But still. Worth it. Damn they are good!)
All the ingredients are pretty standard in most kitchens, except maybe the buttermilk. I keep a container of buttermilk in my fridge because I have several recipes that calls for it and it lasts a long ass time. But, there is a also powder buttermilk that you can use that keeps opened in the refrigerator...and while I do have some of that powdered buttermilk in my fridge right this minute (it makes really good "ranch" flavored seasoning to sprinkle on popcorn. Oh, the many wonderful uses of buttermilk!!!!)...we used real low-fat buttermilk.
I can hardly wait for the weekend so I can have more of these pancakes. And to perhaps walk more.
