I know I am not the first to come up with this total Ah-Ha, i.e. Brilliant, idea but I am so thrilled I thought I would share anyway.
So, here is the quick backstory:
I try and vary the kids lunches so they don't get bored. We make tuna, ham, turkey, and peanut butter and jelly most of the time. When I made a ham spread out of leftover holiday ham the kids were begging for more.
Which got me thinking (I know, scary)...
I was at the store and found a package of six chicken drum/thigh pieces and instantly thought I could use that for lunches and more.
On a Sunday afternoon I put three of the chicken pieces into a pot of water with some seasonings and a bay leaf and boiled the chicken.
The chicken broth from the pot of chicken I put into containers in my fridge and the pieces I tore the meat off the bone and made a huge container of chicken salad.
The other three pieces I seasoned simply and roasted which gives the chicken a nice flavor and after an hour I tore the meat off the bone and chopped it up and put it in the freezer for another big container of chicken salad for next week while the kids are home on winter break (or, filling for quesidillas, tacos, with pasta, for chicken noodle soup, or as an appetizer for a Sunday afternoon served with crackers).
All for under five bucks.
I can't even buy one package of turkey slices or a jar of peanut butter for under five bucks.
Is this not fantastic, or what?
For UNDER five bucks I got tons of chicken for lunches, dinners, or snacks plus I filled two containers of fresh, gloriously rich, chicken broth to use in the upcoming weeks as well.
