I no longer throw away the bits and pieces of vegetables. You know, the ends of onions, the part of the bell peppers you don't chop, garlic skin, ends of carrots, zucchini, and tomatoes. Basically, anything that comes from the earth.
I label a freezer bag and store the bits and pieces into the bag until it is full and then I cook it down to make homemade vegetable stock.
Once the vegetable broth is cooked down and cooled (and drained, of course) I put the liquid in smaller freezer bags, about 2 cups worth since that seems to be the amount I need for most recipes, and two cups defrosts rather quickly.
I was buying a chicken broth at Costco every month for about eight bucks for six boxes. Making my own vegetable stock with pieces of vegetables that would normally just get tossed in the trash has saved us about fifty bucks over the past six months.
Fifty bucks. Saved. And that is on only one teeny little change.
The best part is I know it is fresh and each broth has a somewhat different flavor because each bag has a different mixture of vegetables.
That's a great idea! I've been making chicken stock with the leftover bits from roasted chicken but I don't eat roasted chicken often enough. I think I will steal your idea! Thanks!
