I have never grown onions before.
When I was walking through a local nursery back in mid-spring Josh spotted the bulbs for yellow onions and asked if we could grow some onions this year. I was mildly intrigued (and figured I could have onions in my pantry almost all winter long!) so I agreed and knew that one of our small square beds would be perfect for the onions.
They have been by far the easiest of vegetables to grow but I have been told that I need to thin the onions because otherwise they will grow in ugly shapes. So, I thinned.
And pulled up green onions.
Huh?
What the hell? I thought I was growing yellow onions.
I was putting together a garden notebook (shut up) this weekend and came across the packaging for the yellow onions bulbs. Apparently you can pick green onions anytime but if you want them to continue on to become yellow onions you just leave them in the ground until they wilt and then they lay on the soil to dry, etc. etc.
Wha?
Sometimes I feel so like a city girl.
I never knew this.
So, I thinned dozens of green onions and left the rest to go onto a bigger, yellow onion life.
I suppose it is a win-win. I love green onions too and I can enjoy those all summer and then enjoy the yellow onions all fall and winter.
Anyone know of a way to preserve green onions so they last longer? Drying them, maybe?
