If you are reading my other blog you know how much I love eating as close to whole foods as possible. I rarely, if ever, buy processed type foods and my freezers DO NOT have one box of crap or bag of junk in them. And I am proud of that. I am trying hard to not fill my kids bodies with processed yucky stuff and instead stay as close to whole as I possibly can.
Here is a GREAT and easy recipe for homemade baked mozzarella sticks. (I used to buy them in a box in the freezer section at Costco for a small fortune...back in the day...NEVER again!)
1 egg
1/2 cup Italian seasoned breadcrumbs
1 12oz package mozzarella string cheese
Marinara sauce
Preheat oven to 350.
Beat egg until foamy in shallow bowl.
in small skillet, cook breadcrumbs over medium heat until light brown, about 5 minutes.
Dip cheese in egg, then coat completely with breadcrumbs. Place on a sprayed, foil-lined baking sheet. Lightly spray tops of cheese sticks.
Bake 5-6 minutes or until heated. Serve with warmed marinara sauce.
MY NOTES:
1. I don't buy seasoned breadcrumbs so I simply add a pinch of basil, oregano, and parsley plus some onion and garlic powder and a pinch of salt to my plain breadcrumbs.
2. I cut the cheese sticks in half (they just seem to go further that way).
3. I make my own homemade dipping sauce: either pizza sauce or pasta sauce. Either one works great. I also prefer the sauce cold because I like the warm, gooey cheese and the contrast of the cold sauce, but that is just one of my (many, hey!) quirks.
4. The kids and I both LOVE these and the tray is gone in a matter of hours. So good and SO MUCH BETTER than what you find in a box you keep in your freezer!
